Sayur Melinjo Kacang Panjang (Padi Oats & Long Beans Stew)

Bahan250 gr Melinjo, 100 gr Kacang panjang-iris, Minyak10 Petai-belah, 200 gr Ayam-iris, 400 ml Santan, Garam1 Sereh & 2 cm Lengkuas-geprek, 2 Cabai merah-iris3 Daun jeruk, 2 Daun salam, 200 ml Air, 1 sm Gula jawa Haluskan:2 cm Kencur, 2 Cabai merah, 3 Cabai keriting4 Bawang merah, 2 Bawang putih, 3 Kemiri
Cara membuatTumis bumbu halus & cabai hingga harum. Masukkan santan, air, melinjo, petai, gula, lengkuas, sereh, dn jeruk & salam. Masak hingga melinjo empuk/matang, aduk sesekali.Beri ayam, kacang panjang & garam. Masak hingga ayam matang & bumbu meresap.
Ingredients250 gr Padi oats, 100 gr Long beans-sliced, 2 Bay leaves200 ml Water, 3 Kaffir lime leaves1 tbsp Palm sugar200 gr Chicken fillet & 2 Red chilies-sliced, Salt10 Stinky beans-halved, 400 ml Coconut milk, Oil1 Lemongrass & 2 cm Galangal-bruised Grind into a paste:3 Candlenuts, 2 Garlic cloves, 2 cm Lesser galangal3 Cayenne pepper, 2 Red chilies, 4 Shallots
DirectionsSauté the spices paste & chilies until fragrant. Put in coconut milk, water, padi oats, stinky beans, sugar, galangal, lemongrass, kaffir lime leaves & bay leaves. Cook until the padi oats soften; stir occasionally.Add in chicken, long beans & salt. Let it simmer until the chicken is cooked & the flavor blended.
