CAJUN SMOTHERED CORN 6 to 8 servings3 strips bacon, cut into 1/2-inch pieces1 cup finely chopped onion1 small red bell pepper, stemmed, seeded and minced1 rib celery, finely minced2 medium cloves garlic, peeled and minced4 cups defrosted frozen corn kernels1 cup canned tomatoes, broken up3/4 teaspoon paprika1 teaspoon dried basil, crushed1/4 teaspoon dried thyme, crushed1/4 teaspoon cayenne pepper1/2 teaspoon saltFreshly ground black pepper to taste
1 tablespoon lime juice1. Put the bacon into a saucepan, set over medium heat and fry until crisp. Remove the bacon with a slotted spoon to a paper towel-lined plate.2. Put the onion, bell pepper, celery and garlic into the pan. Saute 3 minutes. Cover the pan and cook 5 minutes.3. Add the corn, tomatoes, paprika, basil, thyme, cayenne, salt and pepper. Cook over medium heat, stirring often, for 5 minutes, or until the corn is heated through and flavors have blended.
4. Add the bacon and lime juice. Stir 1 minute and serve.
