Ayam Suwir Pedas/Sisit Bali (Balinese Spicy Shredded Chicken)

Bahan2 Dada ayam-rebus & suwir2, 300 ml Santan, 5 Daun jeruk2 sm Air asam, 1 cm Lengkuas & 2 Sereh-geprek, Minyak2 Daun salam, 1 sm Gula jawa-sisir, 2 sm Kecap manis1 Jeruk limau Haluskan:5 Cabai merah, 10 Bawang merah, 4 Kemiri, 5 Bawang putih3 Cabai keriting, 2 cm Kencur, 2 cm Kunyit, 2 cm Jahe2 st Garam, 1 st Lada, 1 st Terasi
Cara membuatPanaskan oven 200°C. Tumis bumbu hls hingga harum. Mskkan santan, ayam, daun jeruk, sereh, lengkuas, salam, kecap, gula jw & air asam. Masak hingga cairan terserap.Panggang ayam 15 menit. Keluarkan lalu beri air perasan jeruk limau, aduk.Sajikan dng nasi hangat & lauk lain seperti: Jukut Kacang Panjang, Gedang Mekuah Bali atau Lawar Putih Ayam dan Sambal Matah. Dapat juga disajikan sbg hidangan pendamping untuk Nasi Kuning (klik pada link untuk resep2nya).
Ingredients2 Chicken breasts, 300 ml Coconut milk, 1 tbsp Brown sugar5 Kaffir lime leaves, 1 Kaffir lime, 2 Bay leaves, frying Oil1 cm Galangal+2 Lemongrass-bruised, 2 tbsp Tamarind juice2 tbsp sweet Soy sauce Grind into a paste:5 Garlic cloves3 Cayenne peppers, 2 cm Lesser galangal5 Red chilies, 1 tsp Pepper, 2 cm Turmeric, 2 cm Ginger2 tsp Salt, 10 Shallots, 4 Candlenuts1 tsp Shrimp paste
DirectionsPreheat the oven 200°C. Boil & then shred the chicken, set aside. Sauté the spices paste until fragrant. Put in coconut milk, chicken, lime leaves, lemongrass, galangal, bay leaves, tamarind juice, soy sauce & brown sugar. Cook until the liquid absorbed.Roast the chicken for 15 minutes. Remove from the oven & then stir in kaffir lime juice.Serve with warm steamed rice and other dishes such as: Balinese Creamy Long Bean Salad, Balinese Papaya Soup or Balinese Long Beans & Chicken Salad and Balinese Spicy Lemongrass & Shallot Relish, or serve it as complement for Indonesian Yellow Rice (click on the links for the recipe).
